Hi! My name is Haley Sanders and I have the pleasure of serving as the Nutrition Education Coordinator at the HERC. I recieved my bachelor's of science in Food Science and Human Nutrition with a concentration in dietetics at the university of Illinois- Urbana Champaign. I'm excited to continue my education here at EIU in Nutrition and dietetics. I'm working towards lifelong healthful habits and making nutrition easy. As the Nutrition Education Coordinator, my goal is to provide self-efficacy when it comes to overall nutrition and wellness. You are in the driver's seat of your health; I am merely here to assist you in creating mindful patterns and behaviors. My services include one-on-one nutritional assessment sessions through our Nutritional Analysis program, administering events such as Healthy Cooking 101, and collaborating with various departments to provide nutrition education programming campus wide. Healthy Cooking 101 is a series of cooking classes throughout the year that feature different themes, cooking techniques, and aspects of balanced nutrition.This program is a hands-on experience in the kitchen. No kitchen or nutrition experience is required, it’s FREE and the best part is you get to eat what you make! Registration is required; please click on the date to sign up for the session you wish to attend. Don’t hesitate to sign up for the sessions, as each class fills up quickly!
September's theme is Taco Tuesday! The class will be learning about protein, the different sources, amino acids, and recommended amount. Come test your cooking skills while making skillet elote and meatless tacos. Sign up with your friends or come and join your peers and make some new friends!

The Mirror Project
Student Recreational Center
Partnering with the student recreational center we will be covering some mirrors in the center, where students, faculty and staff are able to write positive traits, compliments and affirmations about themselves other than their physical appearance. This will be available throughout the entire week! Stop by the rec to write the beauty within.
